(A) All systems, whether or not specifically mentioned in this chapter for the thermal processing of low-acid foods in hermetically sealed containers, shall conform to the applicable requirements of this chapter. Additionally, the methods and controls used for the manufacture, processing, and packing of low-acid foods shall be as established in the scheduled process. These systems shall be operated or administered in a manner adequate to ensure that commercial sterility is achieved.
(B) Critical factors specified in the scheduled process shall be measured and recorded at intervals of sufficient frequency to ensure that the critical factors are within the limits specified in the scheduled process.
